VEGETARIAN MUTTON CURRY

VEGETARIAN MUTTON CURRY

This mutton curry is without garlic or onions. You can replace the mutton with vegetarian chicken.This is a chinese way of cooking vegetarian curry.

250gm vegetarian mutton
100gm potatoes,boil until cooked and remove skin and cut.
1 tomato,optional
500ml coconut milk
Salt and sugar to your taste
5-6 tbsp oil
Spice ingredients(A)
3 cardamoms,smashed and use the seeds only
3cm cinamon stick
1 star anise
2 stalk kari leafs
Ground spices(B)
4 red cilli,seeded
5 dried chilli,seeded
4cm ginger
30gm galangal
4 candlenuts
1 tsp vegetarian belacan
1 tbsp coriander powder
2 tbsp curry powder
Ground all this into a paste

1. Heat oil in a pan and fry A until fragrant. Add in ground ingredients(B) and continue to fry until oil separates.
2. Pour in the coconut milk and add the vegetarian mutton and tomato(if you are using)
stir well. And bring to a simmering boil over a gentle low heat.
3. Once it cames to a boil.add the potatoes,salt and sugar stir well let it boil a while. Dish out to serve.
